Ingredients

  • 200g spaghetti
  • 100g pancetta
  • 2 large eggs
  • 50g pecorino cheese
  • 50g parmesan cheese
  • Black pepper
  • Salt

Directions

1. Cook the spaghetti in salted boiling water until al dente.

2. In a pan, cook the pancetta until crispy.

3. Beat the eggs and mix with grated cheeses.

4. Drain the pasta and combine with pancetta, then remove from heat.

5. Quickly mix in the egg and cheese mixture, adding pasta water if needed.

6. Serve immediately with extra cheese and black pepper.
